Mediterranean Pasta

Ingredients

  • 400 g Pasta
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 bell Pepper, chopped
  • 1 Zucchini , chopped
  • 200 g Cherry tomatoes, halved
  • 100 g Olives, pitted and sliced
  • 2 tbsp Capers
  • Fresh herbs (basil, parsley)
  • Salt to taste
  • Pepper to taste
  • 1 Lemon (for juice)
  • Parmesan cheese (optional)

Instructions

1. Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

3. Stir in chopped bell peppers, zucchini, and cherry tomatoes. Cook until the vegetables are tender.

4. Add the cooked pasta to the skillet along with olives, capers, and fresh herbs. Toss everything together until well combined.

5. Season with salt, pepper, and a squeeze of lemon juice. Serve warm, garnished with grated Parmesan cheese if desired.
