Quinoa Power Bowl

Ingredients

  • 200 g Quinoa
  • 400 ml Water
  • 1 Cucumber , diced
  • 1 bell Pepper, diced
  • 1 cup Cherry tomatoes, halved
  • 1 can Chickpeas, drained
  • 2 tbsp Olive oil
  • 1 lemon , juiced
  • Salt to taste
  • Pepper to taste

Instructions

1. Rinse the quinoa under cold water until the water runs clear.

2. In a pot, combine the rinsed quinoa and water, then bring to a boil.

3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the water is absorbed.

4. While the quinoa cooks, chop the vegetables and prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper.

5. In a large bowl, combine the cooked quinoa, chopped vegetables, and chickpeas.

6. Drizzle the dressing over the bowl and toss everything together until well mixed.

7. Serve immediately, or refrigerate for a refreshing cold bowl later.
