Enchiladas Verdes
Ingredients
- 500 g Tomatillos
- 2 jalape ños
- 2 cloves Garlic
- 1 Onion
- 2 tbsp Vegetable oil
- 8 corn Tortillas
- 300 g Shredded chicken
- 200 g Cheese (cheddar or queso fresco)
- Sour cream (for serving)
- Fresh cilantro (for garnish)
Instructions
1. Preheat the oven to 180°C.
2. In a blender, combine tomatillos, jalapeños, garlic, and onion. Blend until smooth to create the green sauce.
3. In a skillet, heat oil over medium heat. Pour in the green sauce and simmer for about 10 minutes.
4. In a separate pan, warm tortillas until pliable. Dip each tortilla in the green sauce, then fill with shredded chicken and cheese.
5. Roll the tortillas tightly and place them seam-side down in a baking dish.
6. Pour remaining green sauce over the enchiladas and sprinkle with more cheese.
7. Bake in the preheated oven for about 20 minutes until the cheese is melted and bubbly.
8. Serve hot, garnished with sour cream and cilantro.
