Spaghetti Carbonara

Ingredients

  • 400 g Spaghetti
  • 150 g Pancetta
  • 2 large Eggs
  • 100 g Grated pecorino romano cheese
  • Black pepper to taste
  • Salt for boiling water

Instructions

1. Boil water in a large pot and add salt. Cook the spaghetti until al dente, following package instructions.

2. While the pasta cooks, heat a pan over medium heat and add diced pancetta. Cook until crispy, then remove from heat.

3. In a bowl, whisk together eggs, grated cheese, and black pepper until well combined.

4. Once the spaghetti is cooked, reserve some pasta water and drain the rest. Quickly add the hot pasta to the pan with pancetta.

5. Remove the pan from heat and pour the egg mixture over the pasta, stirring quickly to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.

6. Serve immediately, garnished with extra cheese and black pepper if desired.
