Sauerbraten

Ingredients

  • 1.5 kg Beef roast
  • 500 ml Vinegar
  • 500 ml Water
  • 2 onions , sliced
  • 2 Carrots , chopped
  • 2 celery Stalks, chopped
  • 2 tsp Black peppercorns
  • 2 tsp Salt
  • 2 bay Leaves
  • 1 tsp Sugar
  • 2 tbsp Vegetable oil

Instructions

1. Marinate the beef in a mixture of vinegar, water, onions, and spices for several days to tenderize and flavor the meat.

2. Remove the beef from the marinade and pat it dry. Sear it in a hot pan until browned on all sides.

3. In the same pan, sauté carrots, celery, and onions until softened.

4. Add the beef back to the pan along with the marinade and bring to a simmer.

5. Cover and cook on low heat for several hours until the meat is tender.

6. Remove the beef and let it rest before slicing.

7. Strain the cooking liquid and reduce it to create a sauce.

8. Serve the sliced beef with the sauce and traditional sides like red cabbage and dumplings.
