Lentil Bolognese
Ingredients
- 2 tbsp Olive oil
- 1 onion , chopped
- 1 carrot , diced
- 1 celery Stalk, diced
- 2 cloves Garlic, minced
- 1 tsp Dried oregano
- 1 tsp Dried basil
- 400 g Cooked lentils
- 400 g Diced tomatoes
- Salt to taste
- Black pepper to taste
- Pasta of choice
Instructions
1. Start by heating olive oil in a large pan over medium heat. Add chopped onion, carrot, and celery, and sauté until softened.
2. Stir in minced garlic and cook for a minute until fragrant.
3. Add dried oregano, basil, and a pinch of salt, mixing well.
4. Incorporate cooked lentils and diced tomatoes, then bring the mixture to a simmer.
5. Let it cook for about 20 minutes, stirring occasionally, until the sauce thickens.
6. Season with black pepper and adjust salt to taste before serving over your favorite pasta.
