Omnia Courgette Bread
Ingredients
- 2 medium courgettes
- 200g flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp pepper
- 2 large eggs
- 50ml olive oil
Instructions
1. Start by grating the courgettes and placing them in a clean cloth to squeeze out excess moisture.
2. In a mixing bowl, combine the grated courgettes with flour, baking powder, salt, and pepper. Mix well to ensure the dry ingredients are evenly distributed.
3. In another bowl, whisk together the eggs and olive oil until well combined. Add this mixture to the dry ingredients and stir until just combined.
4. Grease the Omnia baking pan with a little olive oil to prevent sticking.
5. Pour the batter into the Omnia pan, spreading it evenly around the central chimney tube.
6. Place the lid on the Omnia and set it on a low-medium heat on the gas burner.
7. Cook for approximately 30-40 minutes, checking occasionally to ensure it is baking evenly.
8. Once a toothpick inserted into the center comes out clean, remove the Omnia from the heat and let it cool for a few minutes before serving.
