Omnia Mushroom Risotto

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g mushrooms, sliced
  • 300g Arborio rice
  • 1L vegetable broth
  • 50g Parmesan cheese, grated
  • Salt to taste
  • Pepper to taste

Instructions

1. Heat some oil in the Omnia and sauté chopped onions until translucent.

2. Add minced garlic and sliced mushrooms, cooking until the mushrooms are tender.

3. Stir in Arborio rice, allowing it to toast slightly for a couple of minutes.

4. Pour in vegetable broth gradually, ensuring the rice absorbs the liquid before adding more.

5. Once the rice is nearly cooked, add grated Parmesan cheese and stir until creamy.

6. Season with salt and pepper to taste, then place the lid on the Omnia.

7. Cook on low-medium heat for about 20-25 minutes, checking occasionally to ensure it doesn’t stick.
