Pad Thai

Ingredients

  • 200 g Rice noodles
  • 2 tbsp Tamarind paste
  • 3 tbsp Fish sauce
  • 1 tbsp Sugar
  • 1 Lime (juiced)
  • 2 tbsp Vegetable oil
  • 2 cloves Garlic (minced)
  • 200 g Shrimp or chicken
  • 1 Egg
  • 100 g Bean sprouts
  • 2 green Onions (chopped)
  • 30 g Crushed peanuts
  • Lime wedges for serving

Instructions

1. Soak rice noodles in warm water for about 30 minutes until softened.

2. In a bowl, mix together tamarind paste, fish sauce, sugar, and lime juice to create the sauce.

3. Heat oil in a large pan or wok over medium-high heat. Add minced garlic and stir-fry until fragrant.

4. Add shrimp or chicken to the pan and cook until they are just done.

5. Push the protein to one side of the pan and crack an egg into the other side. Scramble the egg until cooked.

6. Drain the noodles and add them to the pan along with the sauce. Toss everything together until well combined.

7. Stir in bean sprouts and chopped green onions, cooking for an additional minute.

8. Serve hot, garnished with crushed peanuts and lime wedges.
