Potato and Leek Soup

Ingredients

  • 2 Leeks
  • 500 g Potatoes
  • 1 liter Vegetable broth
  • 100 ml Cream
  • 2 tbsp Butter
  • Salt to taste
  • Pepper to taste

Instructions

1. Begin by cleaning and slicing the leeks, then sauté them in a pot with some butter until they are soft.

2. Peel and chop the potatoes into small cubes, then add them to the pot with the leeks.

3. Pour in vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer until the potatoes are tender.

4. Use an immersion blender to puree the soup until smooth, or transfer it to a blender in batches.

5. Stir in cream and season with salt and pepper to taste. Heat through before serving.
