Chickpea Curry

Ingredients

  • 2 tbsp Oil
  • 1 onion , chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 2 Tomatoes , diced
  • 1 tbsp Curry powder
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 400 g Chickpeas, drained
  • 400 ml Coconut milk
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Heat oil in a large pan over medium heat. Add chopped onions and sauté until golden brown.

2. Stir in minced garlic and grated ginger, cooking for a minute until fragrant.

3. Add diced tomatoes and cook until they soften and break down.

4. Mix in curry powder, cumin, and coriander, cooking for a couple of minutes to release the spices' flavors.

5. Add drained chickpeas and stir well to coat them with the spice mixture.

6. Pour in coconut milk and bring the mixture to a simmer. Let it cook for about 15 minutes, stirring occasionally.

7. Season with salt and pepper to taste, and add fresh cilantro before serving.
