Omnia Ratatouille

Ingredients

  • 1 medium eggplant
  • 2 medium zucchini
  • 2 bell peppers
  • 1 onion
  • 2 cloves garlic
  • 400g crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

1. Begin by slicing the eggplant, zucchini, and bell peppers into thin rounds.

2. Chop the onion and mince the garlic.

3. In the Omnia, layer the sliced eggplant around the outer ring, followed by the zucchini and bell peppers.

4. Sprinkle the chopped onion and minced garlic evenly over the vegetables.

5. Season the layers with salt, pepper, and dried herbs.

6. Pour the crushed tomatoes over the layered vegetables, ensuring they are well covered.

7. Place the lid on the Omnia and set it on a low-medium heat on the gas burner.

8. Cook for approximately 30-40 minutes, checking occasionally to ensure it doesn’t burn.

9. Once the vegetables are tender and the flavors melded, remove from heat and let it sit for a few minutes before serving.
