Omnia Vegetable Curry
Ingredients
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 2 tsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 400g mixed vegetables (carrots, bell peppers, zucchini)
- 400ml coconut milk
- 200ml vegetable broth
Instructions
1. Begin by heating the Omnia on low-medium heat.
2. In the base of the Omnia, add chopped onions and sauté until they become translucent.
3. Add minced garlic and grated ginger, stirring for a minute until fragrant.
4. Incorporate diced tomatoes and cook until they soften.
5. Mix in the curry powder, cumin, and turmeric, allowing the spices to toast slightly.
6. Add chopped vegetables of your choice, ensuring they are evenly distributed around the central chimney.
7. Pour in coconut milk and vegetable broth, stirring gently to combine.
8. Place the lid on the Omnia, ensuring it is secure.
9. Cook for approximately 30-40 minutes, checking occasionally to ensure it does not burn, and adjusting the heat as necessary.
10. Once the vegetables are tender, remove from heat and let it sit for a few minutes before serving.
