Omnia Chicken Enchiladas

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup enchilada sauce
  • 1 can black beans, drained
  • 1 cup corn, drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 tortillas
  • 1 cup shredded cheese

Instructions

1. Begin by cooking the chicken in a skillet until fully cooked, then shred it and set aside.

2. In a bowl, combine the shredded chicken with enchilada sauce, black beans, corn, and spices.

3. Take the tortillas and fill each with the chicken mixture, rolling them tightly.

4. Place the rolled enchiladas in the Omnia, arranging them around the central chimney tube.

5. Pour any remaining enchilada sauce over the top of the enchiladas and sprinkle with cheese.

6. Cover the Omnia with the red domed lid and place it on a low-medium heat burner.

7. Cook for approximately 25-30 minutes, checking occasionally to ensure even cooking.

8. Once the cheese is melted and bubbly, remove from heat and let it sit for a few minutes before serving.
